Mark leads the global Food Environment and Consumer Behavior team. His work focuses on transforming food systems by strengthening inclusive relationships between farmers, traders, and consumers in traditional markets, and by linking sustainable production with healthier consumer choices.
Mark works extensively with governments and local stakeholders to design national and subnational food system transformation strategies. He employs practical, participatory approaches that convenepolicymakers, communities, and market actors to cocreate pathways toward healthier, more resilient, and more equitable food systems.
His research explores the intersections of climate resilience, social inclusion, and nutrition, with a focus on how consumer behavior within traditional food environments influences diet-related health outcomes. Through this work, Mark aims to position food systems as a powerful lever for preventing non-communicable diseases and improving public health.
